Ingredients
  

Pasta and Sauce Ingredients

  • 8 oz spaghetti or fettuccine your choice
  • 1 cup ripe tomatoes, diced fresh or canned
  • 1 cup heavy cream can substitute with half-and-half or coconut milk
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions
 

Cooking the Pasta

  • In a large pot, bring salted water to a boil.
  • Add your pasta and cook according to package instructions until it’s al dente.
  • Once done, drain and set aside.

Preparing the Sauce

  • While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  • Add the minced garlic and sauté until it turns golden brown.
  • Toss in the diced tomatoes along with salt and pepper, and let it simmer for about 5 minutes.
  • Lower the heat and carefully stir in the heavy cream until the mixture is well blended.
  • Add the cooked pasta to the skillet and toss gently so that every strand is beautifully coated in the sauce.

Serving

  • To serve, top with fresh basil and, if you’d like, some grated Parmesan cheese.

Notes

For best results, serve immediately. Pair with a green salad or garlic bread for a complete meal.
