Preparation

  • In a large pot, heat the butter and olive oil over medium heat.
  • Add the sliced onions and cook, stirring frequently, until they are caramelized and golden (about 20 minutes).
  • Pour in the broth and add thyme, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 20 minutes to blend the flavors.

Broiling

  • Preheat your oven's broiler.
  • Ladle the soup into oven-safe bowls. Top each bowl with croutons and a blend of the three cheeses.
  • Place the bowls under the broiler until the cheese is melted and bubbly—watch closely to avoid burning.

Serving

  • Serve hot and enjoy the comforting goodness.

Notes

For storage, keep leftovers in an airtight container in the refrigerator for up to three days. To reheat, warm on the stove over low heat. For longer storage, you can freeze it, though the cheese topping may alter in texture. Customize with different herbs or toppings as desired.
