  • 1 cup freshly grated jack cheese Feel free to substitute with cheddar or mozzarella.
  • 1 cup heavy cream Can use low-fat cream for a lighter option.
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme or oregano
  • Salt and pepper to taste

  • Heat your skillet over medium heat and add the extra virgin olive oil.
  • Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for about 5-7 minutes per side until they turn golden brown.
  • Once browned, sprinkle the garlic powder over the chicken. Pour in the chicken broth and let it simmer gently.
  • Add the heavy cream, stirring until the mixture is well combined. Allow it to bubble for a few minutes until it thickens nicely.
  • Stir in the grated jack cheese, letting it melt and create that creamy texture.
  • Serve the dish hot over a bed of rice or pasta, garnished with fresh herbs if desired.

Notes

To store leftovers, place in an airtight container and refrigerate for up to 3 days. For longer storage, freeze and defrost in the refrigerator before reheating.
