  • 1.5 pounds boneless skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1.5 cups chicken broth
  • 3 tablespoons fresh lime juice
  • 1/2 cup chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon red pepper flakes Adjust to preference.
  • 1/3 cup heavy cream Can substitute with coconut cream.
  • 1/4 cup unsalted butter
  • Optional lime wedges for garnish
  • More cilantro for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F.
  • Pound the chicken breasts to make them an even thickness. This helps them cook evenly.
  • Sprinkle the chicken with salt and pepper.

Cooking

  • Heat the olive oil in a large ovenproof skillet over medium-high heat.
  • Add the chicken to the skillet and cook it for 6-7 minutes, turning once for even cooking.
  • Transfer the chicken to a plate and cover it with foil to keep it warm.
  • Remove the skillet from the heat. Add chicken broth, lime juice, red onion, cilantro, and red pepper flakes to the skillet.
  • Return the skillet to the heat and cook, stirring to scrape up any browned bits from the bottom.
  • Bring the mixture to a boil and let it boil uncovered for 10-12 minutes until it reduces to about 1/2 cup.
  • Reduce the heat to medium-low, then add heavy cream and butter. Stir until the butter melts and the sauce is creamy.
  • Add the chicken back into the skillet, turning it to coat in the sauce.
  • Transfer the skillet to the oven and bake uncovered until the chicken is fully cooked through, about 5-10 minutes.

Serving

  • Serve the chicken with the sauce spooned on top and garnish with lime wedges and cilantro.

Notes

For extra flavor, marinate the chicken in lime juice and spices for a few hours before cooking. Adjust red pepper flakes to your spice preference. Customize with vegetables such as bell peppers or spinach.
