Cooking Process

  • Begin by heating the olive oil in a skillet over medium heat.
  • Add the cubed chicken and cook until it’s browned and no longer pink, which should take about 5-7 minutes.
  • Toss in the minced garlic and sliced mushrooms, cooking for an additional 3-4 minutes until the mushrooms soften.
  • Add the fresh spinach and allow it to cook down until wilted.
  • Pour in the heavy cream and mix in the Parmesan cheese, stirring until you have a smooth, creamy sauce. Finally, season with salt and pepper before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to one month. Reheat gently over low heat to avoid separating the cream in the sauce.
