  • 4 cups fresh spinach Substitute with thawed, drained frozen spinach if necessary.
  • 1 cup cream cheese Softened to room temperature.
  • 1 cup shredded mozzarella cheese Add extra for serving if desired.
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste.
  • 1 cup breadcrumbs Optional for topping.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, fresh spinach, cream cheese, mozzarella cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  • Mix well until all ingredients are evenly combined.
  • Transfer the mixture into a greased baking dish.
  • If you like a crunchy topping, sprinkle breadcrumbs on top.
  • Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and golden brown.
  • Allow it to cool for a few minutes before serving.

Notes

Serve alongside a fresh garden salad or with crusty bread. Garnish with extra mozzarella or fresh herbs for added flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
