  • 2 cups cooked chicken, shredded Use leftover chicken for convenience.
  • 2 cups fresh spinach, chopped Can use frozen spinach if well-thawed and drained.
  • 1 cup cream cheese, softened Can substitute with Greek yogurt for a healthier option.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 8 oz egg noodles (optional) Add for a heartier meal.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the softened cream cheese, chicken broth, garlic powder, salt, and pepper until smooth and creamy.
  • Stir in the shredded chicken, chopped spinach, half of the mozzarella cheese, and half of the Parmesan cheese.
  • If using egg noodles, cook them according to the package instructions, then fold them into the mixture.

Assembly and Baking

  • Pour the chicken mixture into a greased baking dish.
  • Sprinkle the remaining mozzarella and Parmesan cheese on top.
  • Place the dish in the preheated oven and bake for 25-30 minutes, or until the casserole is bubbly and the cheese is golden brown.
  • Allow it to cool for a few minutes before serving.

Notes

Serve hot, garnished with fresh herbs like parsley or basil. Pair with a side salad or garlic bread. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
