  • 48 pieces Ritz Crackers
  • 1 8 oz block cream cheese, softened Ensure it is room temperature for easy mixing.
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup finely chopped chives Can substitute with scallions.
  • 1/4 cup finely chopped red bell pepper Can substitute with diced jalapeƱos for spice.
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Preparation

  • Start by softening the cream cheese to make mixing easier.
  • In a medium bowl, combine the cream cheese, shredded cheddar, chives, red bell pepper, garlic powder, and a pinch of salt and black pepper. Mix until everything is well blended.
  • Take a Ritz Cracker and spread a teaspoon of the cheese mixture on top. Top it with another cracker to form a sandwich.
  • Repeat this process until all crackers and filling have been utilized.
  • For a finishing touch, optionally garnish with some extra chopped chives.

Notes

These sandwiches can be served chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to a month.
