  • 100 g bacon, diced Can substitute with pancetta.
  • 1 cup frozen peas Fresh peas can be used as well.
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese Use freshly grated for best flavor.
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • to taste Salt and pepper Adjust to preference.

  • Begin by cooking the spaghetti according to the package instructions until it’s al dente.
  • In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook it until crisp.
  • Introduce the minced garlic and frozen peas to the skillet, sautéing for an additional 2-3 minutes until the peas soften.
  • In a separate bowl, whisk the eggs and grated Parmesan cheese until smooth.
  • Drain the pasta and add it to the skillet with the bacon and peas, removing from heat to avoid scrambling the eggs.
  • Quickly pour the egg and cheese mixture over the pasta, tossing to create a creamy sauce.
  • Season with salt and pepper to taste, and serve immediately.

Notes

For variations, consider adding red pepper flakes for heat or mushrooms/asparagus for extra texture. Store leftovers in an airtight container in the fridge for 2-3 days, adding a splash of water when reheating.
