  • 1/2 cup dried cranberries, chopped Fresh cranberries are not recommended.
  • 1/2 cup pistachios, chopped Additional chopped pistachios for rolling (optional).
  • 1/4 cup heavy cream Can substitute with coconut cream for a dairy-free version.
  • 1 tsp vanilla extract

Preparation

  • Begin by heating the heavy cream in a saucepan over medium heat until it just begins to simmer.
  • Remove from heat and stir in the chopped white chocolate until it’s melted and completely smooth.
  • Mix in the chopped cranberries, chopped pistachios, and vanilla extract, ensuring everything is well combined.
  • Transfer the mixture to the refrigerator and let it chill for about 1-2 hours, or until firm.
  • Once firm, scoop out small portions and roll them into desired bite-sized balls.
  • If you'd like a little extra crunch, roll the truffles in additional chopped pistachios.
  • Store your truffles in an airtight container and enjoy these festive delights!

Notes

These truffles are delightful on their own or paired beautifully with hot cocoa or coffee. Store in an airtight container in the fridge for up to two weeks or freeze for up to three months, thawing in the fridge overnight when ready to enjoy.
