Ingredients

Main ingredients

  • 1 piece turkey breast (about 3-4 pounds)
  • 1 cup fresh cranberries You can substitute with frozen cranberries, do not thaw.
  • 1/2 cup orange juice
  • 1/2 cup sugar Adjust if using canned cranberries.
  • 1 tablespoon grated orange zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil For brushing the turkey.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) to prepare for roasting.
  • In a saucepan, combine fresh cranberries, orange juice, sugar, and grated orange zest. Cook over medium heat until the cranberries burst and the glaze thickens.
  • Pat the turkey breast dry and season it generously with salt and black pepper. Brush the turkey with olive oil for added moisture.
  • Place the seasoned turkey breast in a roasting pan and pour the cranberry-orange glaze over it, ensuring it is well-coated.

Cooking

  • Place the roasting pan in the preheated oven. Roast for 1.5 to 2 hours, basting the turkey occasionally with the glaze. The turkey is done when the internal temperature reaches 165°F (74°C).
  • Once cooked, let the turkey breast rest for a few minutes before slicing.

Serving

  • Slice the turkey breast into thick pieces and arrange them on a platter. Drizzle extra glaze over the top for an appealing presentation.

Notes

Make the cranberry glaze in advance to save time on cooking day. Regularly baste the turkey to keep it moist and enhance flavor. For variations, consider adding cayenne pepper, using chicken instead of turkey, or incorporating nuts like pecans or walnuts into the glaze.
