  • 4 pieces chicken breasts
  • 1 cup fresh cranberries Can substitute with canned cranberries if needed.
  • 1/2 cup orange juice
  • 1/4 cup honey Adjust based on desired sweetness.
  • 1 teaspoon orange zest
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh rosemary Optional for added flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the cranberries, orange juice, honey, orange zest, salt, and pepper. Mix well.
  • Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and sear them until they’re golden brown on both sides, about 3-4 minutes per side.
  • Transfer the seared chicken to a baking dish. Pour the cranberry-orange mixture over the chicken breasts, ensuring they’re well-coated.
  • If using, sprinkle the chopped rosemary over the top for an extra burst of flavor.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  • Let the chicken rest for a few minutes before serving to maintain its juiciness!

Notes

Cranberry Orange Chicken can be paired with rice, mashed potatoes, green salad, or roasted vegetables. Store leftovers in an airtight container for up to three days.
