  • 1 cup fresh or canned cranberries Canned works just as well if fresh aren't in season.
  • 1/2 cup fresh orange juice
  • 1/4 cup honey Can substitute with maple syrup for a unique twist.
  • 1 teaspoon orange zest
  • to taste salt and pepper
  • 1 tablespoon olive oil

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Season the chicken with salt and pepper, then brown each side for about 5 minutes.
  • In a separate bowl, combine the cranberries, orange juice, honey, and orange zest to create a sauce.
  • Lay the browned chicken in a baking dish and pour the cranberry mixture on top.
  • Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
  • Serve warm and enjoy.

Notes

For extra flavor, consider marinating the chicken in orange juice and zest for one hour before starting the recipe. Add a pinch of red pepper flakes for a kick, and don't skip the browning step for depth.
