Preparation

  • Start by boiling a large pot of salted water. Cook the cheese tortellini following package instructions, typically about 3-5 minutes. Drain and set aside.
  • Season your steak with salt, black pepper, garlic powder, and smoked paprika. Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Once hot, add the steak and cook for 3-4 minutes on each side for medium-rare. Remove from the skillet and let it rest.

Cooking the Sauce

  • In the same skillet, lower the heat and add 4 tbsp of butter. Once melted, add 5 minced garlic cloves and sauté until fragrant, about 30 seconds.
  • Pour in 1 cup of heavy cream and 3/4 cup of whole milk, stirring until well combined.
  • Mix in 1 1/4 cups of grated parmesan cheese, stirring until the cheese has melted and the sauce is creamy.

Combining

  • Slice the rested steak and return it to the skillet along with the cooked tortellini. Toss everything together until the pasta is coated with the sauce.
  • Taste and adjust seasoning if necessary. If desired, sprinkle some red pepper flakes over the top and garnish with chopped parsley and cracked black pepper.

Notes

Serve this dish in wide, shallow bowls for presentation and consider pairing it with a fresh garden salad or crusty garlic bread.
