  • 8 oz linguine pasta
  • 1 lb chicken breast, cut into bite-sized pieces

Sauce and Seasoning

  • 2 tbsp butter melted
  • 4 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 1 lemon Juice of 1 lemon
  • 1 tsp dried herbs (such as thyme or parsley)
  • to taste Salt and pepper

Garnish

  • to taste Fresh parsley for garnish

Preparation

  • Cook the linguine according to package instructions; then drain and set aside.
  • In a large skillet, melt the butter over medium heat.
  • Add the chicken pieces, seasoning them with salt and pepper. Cook until they are browned and fully cooked.
  • Stir in the minced garlic and cook for another minute.
  • Add the Dijon mustard, lemon juice, and dried herbs, stirring to combine everything into a luscious sauce.
  • Toss the cooked linguine into the skillet with the chicken and sauce until every strand is well coated.
  • Serve warm, garnished with fresh parsley.

Notes

For a twist, consider using whole wheat linguine or swapping the chicken for shrimp. Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat gently over low heat.
