  • 1 lb boneless, skinless chicken thighs or breasts Alternatively, use rotisserie chicken for a quicker option.
  • 2 cups potatoes (Yukon Gold or Russet) Gives the soup a creamy texture.
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped
  • 4 cups chicken broth Or vegetable broth for a lighter version.
  • 2 tbsp olive oil For sautéing.
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme Can substitute with dried herbs.
  • 2 tbsp fresh parsley, chopped For garnish.
  • 2 leaves bay leaves
  • to taste salt
  • to taste pepper

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onions and sauté until softened, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Stir in the diced chicken, season with salt and pepper, and cook until no longer pink, around 5-7 minutes.
  • Add the chopped potatoes, carrots, and celery, followed by the chicken broth. Bring to a boil.
  • Once boiling, reduce heat and add fresh herbs. Simmer for 25-30 minutes, or until the potatoes are tender.
  • Adjust seasoning as needed and serve hot.

Notes

For the best results, consider browning the chicken slightly before adding the broth. You can also experiment with spices like paprika or cumin. Add a splash of white wine for depth before simmering.
