Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted

For the filling

  • 2 cups cream cheese, softened Make sure it is at room temperature for better mixing.
  • 1 cups powdered sugar
  • 1 cups heavy cream
  • 0.5 cups brewed coffee, cooled
  • 3 large eggs Add one at a time and mix thoroughly.
  • 1 teaspoon vanilla extract
  • 0.25 cups coffee liqueur (optional) Can be omitted without affecting overall flavor.

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, stir together the graham cracker crumbs and melted butter. Press this mixture firmly into the base of a springform pan to shape your crust.
  • In a separate bowl, beat the cream cheese until it’s creamy and smooth. Gradually add in the powdered sugar, mixing until well combined.
  • Pour in the cooled brewed coffee, vanilla extract, and coffee liqueur if you’re using it. Mix well until everything is fully incorporated.
  • Add the eggs one at a time, ensuring that you mix thoroughly after each addition for a smooth consistency.
  • Pour the cheesecake filling over the crust in your springform pan.

Baking

  • Bake in the preheated oven for 50-60 minutes, or until the center is set.

Chilling

  • Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight before serving.

Notes

For best results, allow your cream cheese to come to room temperature before mixing to avoid lumps.
