Ingredients
  

For the Blondies

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted Make sure it is not too hot when mixing.
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon

For the Frosting

  • 1/4 cup powdered sugar
  • 4 oz cream cheese, softened Can substitute with Greek yogurt for a lighter option.
  • 2 tablespoons milk For frosting.

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  • In a large bowl, combine the brown sugar, granulated sugar, and melted butter, mixing until smooth.
  • Beat in the eggs and vanilla extract until well mixed.
  • In a separate bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  • Spread half of the blondie batter into the prepared baking dish.
  • In a small bowl, mix together cinnamon and sugar, then sprinkle generously over the batter.
  • Drop spoonfuls of the remaining batter on top and use a knife to swirl it gently for that cinnamon roll effect.

Baking

  • Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • While the blondies cool, prepare the frosting by beating together powdered sugar, softened cream cheese, and milk until smooth.
  • Once cooled, frost your blondies, slice, and serve!

Notes

These blondies are best served warm. You can add nuts or chocolate chips for variations. Store in an airtight container for up to three days or freeze for longer storage.
