  • 1.25 cups orange segments (mandarin, clementine, or tangerine)
  • 1/2 cup pomegranate seeds (or dried cranberries) for a sweeter twist
  • 1/2 cup crumbled feta cheese
  • 1/2 cup candied pecans, roughly chopped

For the Dressing

  • 1/3 cup olive oil
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon minced shallot
  • Salt and pepper to taste

Preparation

  • Add your mixed spring greens to a large bowl.
  • Toss in the orange segments, pomegranate seeds (or dried cranberries), crumbled feta, and candied pecans.
  • In a separate small bowl, whisk together the olive oil, honey, Dijon mustard, apple cider vinegar, minced shallot, and a pinch of salt and pepper until smooth.
  • Drizzle the dressing over the salad according to your taste preference.

Notes

To keep the salad fresh, store any leftovers in an airtight container in the refrigerator. It’s best enjoyed within 1-2 days for maximum crunch and flavor. Avoid adding the dressing to the whole salad if you plan to have leftovers.
