Ingredients
  

For the red velvet cake

  • 2.5 cups 2 1/2 cups all-purpose flour
  • 2 tbsp 2 tbsp unsweetened cocoa powder
  • 1 tsp 1 tsp baking powder
  • 1 tsp 1 tsp baking soda
  • 0.5 tsp 1/2 tsp salt
  • 1.75 cups 1 3/4 cups granulated sugar
  • 0.75 cups 3/4 cup vegetable oil
  • 1 cup 1 cup buttermilk If out of buttermilk, mix 1 tbsp vinegar or lemon juice with 1 cup milk.
  • 2 large 2 large eggs
  • 1-2 tbsp 1–2 tbsp red food coloring
  • 1 tsp 1 tsp vanilla extract
  • 1 tsp 1 tsp white vinegar

For the cheesecake layer

  • 16 oz 16 oz cream cheese Ensure at room temperature.
  • 0.5 cups 1/2 cup granulated sugar
  • 0.5 cups 1/2 cup sour cream
  • 2 large 2 large eggs
  • 1 tsp 1 tsp vanilla extract

For the frosting

  • 8 oz 8 oz cream cheese Ensure at room temperature.
  • 0.5 cups 1/2 cup unsalted butter Ensure at room temperature.
  • 3 cups 3 cups powdered sugar
  • 1 tsp 1 tsp vanilla extract

Instructions
 

Baking the Cheesecake Layer

  • Preheat your oven to 325°F (163°C).
  • In a mixing bowl, combine 16 oz cream cheese, 1/2 cup granulated sugar, 1/2 cup sour cream, 2 large eggs, and 1 tsp vanilla extract. Blend until smooth.
  • Pour the mixture into a greased 9-inch springform pan and bake for 40-45 minutes.
  • Allow to cool, then chill.

Baking the Cake Layers

  • Once the cheesecake is set, increase your oven temperature to 350°F (177°C).
  • In another bowl, mix together 2.5 cups flour, 2 tbsp cocoa powder, 1 tsp baking powder, 1 tsp baking soda, and 1/2 tsp salt.
  • Separately, whisk together 1.75 cups sugar, 3/4 cup vegetable oil, 1 cup buttermilk, 2 eggs, red food coloring, 1 tsp vanilla extract, and 1 tsp white vinegar.
  • Combine the wet and dry ingredients until just mixed, then pour the batter into two greased 9-inch round cake pans.
  • Bake for 25-30 minutes, or until a toothpick comes out clean.
  • Let the cakes cool completely.

Preparing the Frosting

  • Beat together 8 oz cream cheese, 1/2 cup unsalted butter, 3 cups powdered sugar, and 1 tsp vanilla extract until smooth and creamy.

Assembling the Cheesecake

  • Start with one layer of red velvet cake, spread a layer of cheesecake on top, and then add the second red velvet layer.
  • Frost the entire cake with the cream cheese frosting.
  • Chill for about an hour before serving.

Notes

For a festive touch, sprinkle crushed candy canes or festive sprinkles on top.
