Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar until well mixed.
  • Press this mixture firmly into the bottom of a greased 9×13 inch baking dish.
  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add 1 cup sugar and vanilla extract, continuing to mix until thoroughly combined.
  • Incorporate the eggs one at a time, making sure to beat well after each addition.
  • Pour the cream cheese mixture over your crust in the baking dish.
  • Spread the cherry pie filling evenly over the cream cheese layer.
  • Bake for 35-40 minutes, or until the center is set.
  • Allow the cheesecake bars to cool completely before cutting them into squares. Serve chilled.

Notes

For the best results, ensure cream cheese is fully softened. Mixing at room temperature creates a smooth mixture. Do not overbake; a slight jiggle in the center is ideal.
