Ingredients
  

For the Crepes

  • 1 cup all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 2 large eggs
  • 1 1/4 cups milk
  • 1 tsp vanilla extract
  • 2 tbsp melted butter plus more for cooking

For the Whipped Cream Filling

  • 1 cup heavy whipping cream chilled
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract (for whipped cream)
  • 2 tbsp cocoa powder (optional for chocolate cream)

Optional Garnishes

  • to taste Nutella or chocolate ganache (optional for indulgence)
  • to taste Chocolate shavings, cocoa powder, powdered sugar, and fresh berries (optional for garnish)

Instructions
 

Prepare the Crepe Batter

  • In a mixing bowl, combine the all-purpose flour, unsweetened cocoa powder, sugar, and salt. Whisk until well blended.
  • In a separate bowl, beat the two eggs. Add in the milk and vanilla extract, mixing them together.
  • Gradually add your wet ingredients to the dry ingredients, stirring until the batter is smooth.
  • Let the batter rest for about 30 minutes.

Cook the Crepes

  • Heat a non-stick pan over medium heat and brush it lightly with melted butter.
  • Pour a small amount of the batter into the pan, tilting it to cover the surface evenly.
  • Cook for 1-2 minutes, or until bubbles start to form on the surface. Flip the crepe and cook for an additional minute.
  • Repeat this process with the remaining batter.

Prepare the Filling

  • Use an electric mixer to whip the chilled heavy cream until soft peaks form.
  • Gradually add the powdered sugar and the second teaspoon of vanilla extract, then continue whipping until stiff peaks form.
  • Mix in the optional cocoa powder to create a chocolate whipped cream, if desired.

Assemble the Crepes

  • Spread a generous amount of the whipped cream filling onto each crepe.
  • Optionally add Nutella or chocolate ganache for an indulgent experience.
  • Fold or roll the crepes as desired.
  • Top with chocolate shavings, a dusting of cocoa powder, powdered sugar, and fresh berries before serving.

Notes

Store leftover crepes in an airtight container in the refrigerator for up to 2 days. They can be reheated on a pan or in the microwave. For longer storage, freeze them layered with parchment paper.
