Brownie Layer

  • 1/2 cup unsalted butter Melted
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt

Cheesecake Layer

  • 8 oz cream cheese (softened) Low-fat cream cheese can be used for a lighter version.
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  • In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar, eggs, and 1 teaspoon of vanilla.
  • Beat in the cocoa powder, flour, and salt. Spread this brownie batter evenly into your prepared pan.

Cheesecake Layer

  • In a separate bowl, beat together the cream cheese, 1/4 cup sugar, 1 egg, and 1 teaspoon of vanilla until it’s smooth and creamy.
  • Drop spoonfuls of the cream cheese mixture over the brownie batter and use a knife to swirl them together gently.

Baking

  • Bake in the oven for 25-30 minutes until the center is set.
  • Allow the brownie bites to cool before cutting them into bite-sized pieces.
