Ingredients
  

For the Crust

  • 1 cup chocolate cookie crumbs
  • 1/4 cup melted butter

For the Filling

  • 4 oz cream cheese, softened Make sure it's softened properly.
  • 1/4 cup sugar Can use sugar-free alternative.
  • 1/2 tsp vanilla extract
  • 1/2 cup whipped cream Don’t overmix into cheese mixture.
  • chocolate chips for topping (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine chocolate cookie crumbs and melted butter until well mixed.
  • Press the mixture into the bottom of mini muffin tins to form the crust.
  • In another bowl, beat together the softened cream cheese, sugar, and vanilla until smooth and creamy.
  • Carefully fold in the whipped cream until everything is fully combined.

Baking

  • Spoon the cheesecake mixture into the prepared crusts, filling them generously.
  • Bake for 10-12 minutes or until the cheesecake centers are set but still slightly jiggly.
  • Remove from oven and let cool. Top with chocolate chips if desired.

Cooling and Serving

  • Refrigerate for at least an hour before serving to let the flavors meld.

Notes

Serve on a dessert platter with fresh berries or a drizzle of chocolate sauce. Store in an airtight container in the fridge for up to a week or freeze for longer storage.
