Ingredients
  

For the crust

  • 1 cup chocolate cookie crumbs Can use store-bought or homemade.
  • 1/2 cup unsalted butter, melted Ensure it's melted for proper mixing.

For the filling

  • 8 oz cream cheese, softened Use fresh cream cheese for the best texture.
  • 1/4 cup sugar Can be reduced for a less sweet version.
  • 1 tsp vanilla extract
  • 1 pc egg
  • 1/4 cup chocolate chips Optional for topping.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine chocolate cookie crumbs and melted butter until well mixed. Press the mixture firmly into the bottom of a greased mini muffin tin.
  • In another bowl, beat together softened cream cheese, sugar, vanilla extract, and egg until creamy and smooth.
  • Pour the cream cheese mixture over the cookie crusts in the muffin tin, filling each cup evenly.

Baking

  • Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the centers are set.

Cooling

  • Allow the cookie bites to cool in the tin before gently removing them. Top with chocolate chips if desired before serving.

Notes

Store in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months. Thaw in the refrigerator before serving.
