Ingredients
  

Salad Ingredients

  • 1 can (15-ounce/425g) chickpeas, drained and rinsed
  • 1 avocado, pitted and diced Use ripe avocados for the best creaminess.
  • 4 ounces (115g) feta cheese, crumbled Can substitute with a vegan feta alternative.
  • 1/2 cup (75g) red onion, thinly sliced
  • 1/2 cup (50g) fresh parsley, chopped
  • 1/4 cup (25g) fresh mint, chopped Cilantro can be used as an alternative.

Dressing Ingredients

  • 3 tablespoons (45ml) olive oil
  • 2 tablespoons (30ml) fresh lemon juice Helps to prevent avocado from browning.
  • 1 clove garlic, minced
  • 1/2 teaspoon (2.5ml) dried oregano
  • Salt and pepper to taste

Preparation

  • Combine the drained chickpeas, diced avocado, crumbled feta cheese, thinly sliced red onion, chopped parsley, and chopped mint in a large mixing bowl.
  • In a separate small bowl or jar, whisk together the olive oil, fresh lemon juice, minced garlic, and dried oregano. Season this dressing with salt and pepper to your liking.
  • Pour the prepared dressing over the salad ingredients. Gently toss all components until they’re well coated.
  • Serve your Chickpea Feta Avocado Salad immediately, or chill it in the fridge to enhance the flavors for later enjoyment.

Notes

For best results, choose ripe avocados that are slightly soft to the touch. This will enhance the creaminess of the salad. If you’re short on time, pre-cooked chickpeas can save you a few minutes. For a touch of heat, consider adding a pinch of red pepper flakes to the dressing.
