  • 4 pieces boneless, skinless chicken breasts
  • to taste Salt and pepper
  • 2 tablespoons olive oil For searing the chicken
  • 1 cup Boursin cheese Use garlic and fine herbs variety for the best flavor
  • 1/2 cup heavy cream Can substitute with Greek yogurt for a lighter version
  • 1/2 cup chicken broth
  • to taste Fresh parsley and chives For garnish

Instructions
 

Preparation

  • Season both sides of the chicken breasts with salt and pepper.
  • In a skillet, heat the olive oil over medium-high heat.
  • Add the chicken breasts and sear them for 6-7 minutes on each side until they are golden brown and fully cooked.
  • Remove the chicken and set aside.

Cooking the Sauce

  • In the same skillet, pour in the chicken broth and bring it to a gentle simmer, scraping up any flavorful bits from the bottom of the pan.
  • Stir in the Boursin cheese and heavy cream, mixing well until smooth and creamy.

Combining

  • Return the chicken to the skillet, spooning the sauce over the top.
  • Heat for an additional couple of minutes until everything is warmed through.
  • Serve garnished with freshly chopped parsley and chives.

Notes

Serve over mashed potatoes, polenta, or alongside roasted vegetables. Leftovers can be refrigerated for up to three days or frozen for up to three months.
