Ingredients
  

For the Chicken

  • 4 pieces Chicken breasts Can substitute with beef or tofu.
  • 2 tablespoons Olive oil For marinating the chicken.
  • 3 cloves Garlic, minced Enhances the marinade flavor.
  • 1 teaspoon Cumin Adds warmth and earthiness.
  • 1 teaspoon Chili powder Gives a nice spice kick.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Pepper To taste.

For the Tacos

  • 8 pieces Corn tortillas Warmed before filling.
  • 1 cup Onion, chopped For topping.
  • 1/2 cup Cilantro, chopped For topping.
  • 2 pieces Lime For squeezing over tacos.

Preparation

  • Marinate the chicken breasts in olive oil, minced garlic, cumin, chili powder, salt, and pepper. Let this sit for 30 minutes.
  • Preheat your grill and cook the marinated chicken for about 6-8 minutes on each side or until it’s fully cooked.
  • Once grilled, remove the chicken and let it rest for a few minutes before slicing.
  • Warm your corn tortillas on the grill or in a pan until they’re soft and pliable.
  • Fill each tortilla with sliced chicken and top it off with fresh chopped onion and cilantro.
  • Squeeze fresh lime juice over the tacos before serving.

Notes

Serve with sides like guacamole, salsa, or corn salad. For storage, keep grilled chicken and tortillas separately in airtight containers in the fridge for up to 3 days. Chicken can be frozen for up to 3 months.
