  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped for garnish

  • In a large pot, heat the olive oil over medium heat.
  • Add the sliced chicken sausage and cook for 5–7 minutes, or until browned.
  • Toss in the minced garlic and sauté for 1 minute until fragrant.
  • Stir in the broccoli; cook for about 2–3 minutes until it begins to soften.
  • Add the orzo, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
  • Cover the pot and cook for 10–12 minutes, or until the orzo is tender and most of the liquid has been absorbed.
  • Remove from heat and stir in the Parmesan cheese until melted and fully combined.
  • Serve hot, garnished with fresh parsley.

Notes

Let leftovers cool completely before storing in an airtight container. Refrigerate for up to three days or freeze for up to three months.
