Ingredients
  

For the Sandwich

  • 2 slices sourdough or artisan bread Use good quality for the best flavor
  • 1/2 piece ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional) Optional for extra creaminess
  • 1 tsp lemon juice To enhance the avocado flavor
  • 1 tbsp butter (for toasting) For grilling the sandwich
  • to taste salt and pepper

Optional Add-Ins

  • to taste sliced tomato
  • to taste red onion
  • to taste crispy bacon

Instructions
 

Preparation

  • In a small bowl, mash the avocado with the lemon juice, salt, and pepper to create the avocado spread.

Assembly

  • Spread mayonnaise (if using) on one side of each slice of bread.
  • On the non-mayo side of one slice, spread the avocado mixture, then layer the cooked shredded chicken and cheese.
  • Top with the second slice of bread, mayo side facing outward.

Cooking

  • Heat the butter in a skillet over medium heat.
  • Add the sandwich and grill for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is fully melted.

Serving

  • Remove the sandwich from the skillet, slice in half, and serve hot.

Notes

For the best flavor and texture, use good quality bread. Feel free to customize fillings to your liking.
