  • 1 pound chicken breast, cooked and diced Feel free to use rotisserie chicken for convenience.
  • 2 cups frozen tater tots Substitute with whole wheat tater tots for a healthier option.
  • 2 cups Alfredo sauce Homemade Alfredo sauce can elevate the flavor.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen peas and carrots You can also add other vegetables like broccoli or corn.
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the cooked chicken, Alfredo sauce, peas and carrots, salt, and pepper.
  • Spread the mixture evenly in a greased casserole dish.
  • Arrange the tater tots on top of the chicken mixture.
  • Sprinkle the mozzarella and Parmesan cheese over the tater tots.

Cooking

  • Bake for 25-30 minutes or until the tater tots are golden brown and the cheese is bubbly.
  • Garnish with chopped parsley if desired, and serve hot.

Notes

Allow the casserole to cool completely before storing in an airtight container. It can be refrigerated for up to 3-4 days or frozen for up to 2 months. For reheating, use the oven at 350°F (175°C) for about 15-20 minutes.
