Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Make sure the butter is softened but not melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 tablespoon orange zest Don't skip the orange zest for flavor
  • 1/2 cup chopped nuts Optional, can substitute with different dried fruits

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, combine the flour, baking soda, and salt. Gradually blend this dry mixture into the creamed mixture.
  • Fold in the dried cranberries, orange zest, and optional nuts.
  • Drop by rounded tablespoons onto ungreased cookie sheets.
  • Bake for 10-12 minutes, or until the edges are golden.
  • Allow cookies to cool on the sheet for a few minutes before transferring them to wire racks.

Notes

Store cookies in an airtight container at room temperature for up to a week. They can be frozen for up to three months with parchment paper between layers to prevent sticking. Consider serving with a warm cup of spiced tea or a scoop of vanilla ice cream.
