Ingredients
  

For the truffle mixture

  • 8 oz high-quality semi-sweet or dark chocolate, chopped Opt for high-quality chocolate to enhance flavor
  • 1 cup heavy cream
  • 1 cup cherry puree Can substitute with other fruit purees
  • 2 tablespoons cherry liqueur Optional but adds a nice touch

For coating the truffles

  • Cocoa powder or chopped nuts For rolling the truffles

Instructions
 

Preparation

  • In a saucepan, heat the heavy cream until it’s just about to simmer. Remove from heat and add chopped chocolate, stirring until smooth.

Mixing

  • Stir in the cherry puree and cherry liqueur if using. Allow the mixture to cool to room temperature and then refrigerate for about 2 hours, or until firmer.

Forming the Truffles

  • Once the ganache is firm, scoop out small portions and roll them into balls.

Coating

  • Roll the truffles in cocoa powder or chopped nuts until they are fully coated.

Notes

Store in an airtight container in the refrigerator for about a week. Freeze for up to three months, thawing in the refrigerator before serving. Use a double boiler for melting chocolate, and wet hands if too sticky while rolling.
