Ingredients
  

For the Cheesy Mixture

  • 2 cups mashed potatoes Using day-old mashed potatoes can yield a fluffier texture.
  • 1 cup shredded cheddar cheese Feel free to experiment with different cheeses.
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour for gluten-free option.
  • 2 count eggs
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

For Frying

  • Oil Used for frying the potato puffs.

Preparation

  • In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, flour, eggs, green onions, and season with salt and pepper. Mix everything until well combined.
  • Heat oil in a frying pan over medium heat.

Cooking

  • Using a spoon, scoop out a portion of the mixture and roll it into a small ball.
  • Carefully drop the balls into the hot oil, frying them until they turn golden brown on all sides.
  • Remove the potato puffs from the frying pan and let them drain on paper towels to remove excess oil.

Serving

  • Serve warm and enjoy the cheesy goodness!

Notes

These puffs can be served as a side dish, snack, or even a main course. Try drizzling with spicy aioli or accompanying with a tangy dipping sauce. Store in an airtight container for up to 3 days. Can freeze before frying.
