Ingredients
  

For the Scramble

  • 4 medium potatoes, diced Use waxy potatoes like Yukon Gold for best texture.
  • 1 cup shredded cheddar cheese Feel free to experiment with different types of cheese.
  • 4 large eggs
  • ½ cup milk
  • ½ cup cooked ham or bacon, chopped (optional) You can skip this for a vegetarian option.
  • ¼ cup green onions or chives, chopped
  • 2 tablespoons butter
  • Salt and pepper, to taste

Preparation

  • In a medium pot, boil diced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
  • In a large bowl, whisk together the eggs and milk. Season with salt and pepper.

Cooking

  • In a large skillet, melt the butter over medium heat. Add the cooked potatoes and sauté until they start to brown, about 5 minutes.
  • If using, add the chopped ham or bacon to the skillet and stir until heated through.
  • Pour the egg mixture into the skillet, stirring gently to combine with the potatoes and meat.
  • Cook until the eggs are just set, about 3-5 minutes. Sprinkle the shredded cheddar cheese on top and cover the skillet until the cheese melts.
  • Once the cheese is melted, remove from heat and stir in the green onions or chives.

Notes

Serve hot, directly from the skillet. Pair with crispy toast or warm tortillas. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
