Cheese Toppings

  • 1/4 cup grated Parmesan cheese

Seasoning and Oil

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the mixed vegetables with olive oil, garlic powder, Italian seasoning, salt, and pepper until well coated.

Cooking

  • Spread the seasoned vegetables in a single layer on a baking sheet.
  • Roast for about 20-25 minutes, until the veggies are tender and starting to caramelize.
  • Remove from the oven and sprinkle the shredded cheese and Parmesan evenly over the vegetables.
  • Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Notes
