  • 1 lb ground beef Can substitute with ground turkey or chicken
  • 4 cups potatoes, peeled and diced Fresh potatoes are preferred
  • 1 onion, diced
  • 2 cups shredded cheese (cheddar or your choice) Try mozzarella, Monterey Jack, or pepper jack for variation
  • 1 can cream of mushroom soup Can replace with cream of chicken or homemade white sauce
  • 1 cup milk
  • to taste Salt and pepper
  • 1 tsp garlic powder
  • 1 tsp paprika

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef with the diced onion over medium heat. Drain excess fat afterward.
  • In a large bowl, mix the cooked beef, diced potatoes, cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper until well combined.
  • Spread the mixture evenly in a greased 9x13 inch casserole dish.
  • Top the mixture with the shredded cheese, spreading it evenly over the top.

Baking

  • Cover the casserole dish with foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly.

Serving

  • Allow the casserole to cool for a few minutes before serving.

Notes

Serve hot with a simple green salad or steamed vegetables. Garnish with chopped fresh herbs like parsley or chives if desired. For storage, leftovers can be placed in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
