  • 1 cup shredded cheese (choose cheddar or mozzarella)
  • 3 cloves garlic, minced
  • 4 pieces tortillas (flour or corn, your choice)

Preparation

  • Start by heating olive oil in a skillet over medium heat.
  • Once hot, toss in the minced garlic and sauté for about 1 minute, until fragrant.
  • Stir in the shredded chicken and season with salt and pepper, cooking until heated through.
  • Remove from heat and mix in the shredded cheese until melted.
  • Place a hearty amount of the cheesy chicken mix in the center of each tortilla. Fold in the sides and roll up tightly.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in an oven or skillet to maintain crispness. For freezing, wrap each one tightly and they’ll last up to a month. Defrost before reheating for the best taste. Consider adding red pepper flakes for a kick, or swapping chicken for other proteins.
