Preparation

  • Begin by grating the carrots into a large mixing bowl.
  • Core and chop the apples into small cubes without peeling.
  • Chop the nuts roughly to your desired size.
  • Fold in the raisins or craisins, if using.
  • In a separate bowl, whisk together the yogurt, honey (or maple syrup), lemon juice, salt, and pepper.
  • Pour the dressing over the carrot-apple mixture and gently stir until everything is coated evenly.
  • Taste and adjust seasoning as needed.
  • Serve immediately or refrigerate for 30 minutes to meld flavors.

Notes
