  • 8 oz pasta (your choice)
  • 1 lb smoked sausage, sliced
  • 1 tbsp Cajun seasoning
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheese cheddar or gouda works well
  • 1 cup bell peppers, diced
  • to taste Salt and pepper
  • as needed Olive oil for cooking
  • for garnish Chopped parsley

  • Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  • Add the diced onion, bell peppers, and minced garlic. SautĂ© until the vegetables soften, about 2-3 minutes.
  • Sprinkle in the Cajun seasoning and stir for an additional minute to release the spices’ full flavor.
  • Pour in the pasta and enough water or broth to cover. Bring this to a boil, then reduce heat and simmer until the pasta is cooked to al dente, around 10-12 minutes.
  • Stir in the heavy cream and cheese, mixing until everything is melted and creamy.
  • Season with salt and pepper to taste, adjusting as needed.
  • Garnish with chopped parsley before serving.

Notes

This dish stores well in an airtight container in the fridge for up to 3 days. For reheating, add a splash of cream or water. Can be frozen for up to three months.
