  • 2 cups chicken broth Use low-sodium broth if available.
  • 1 tablespoon Cajun seasoning Adjust based on spice preference.
  • Salt and pepper to taste Salt and pepper
  • 1 onion diced onion
  • 2 cloves garlic, minced
  • 1 bell pepper diced bell pepper Any color bell pepper works.
  • Chopped parsley Chopped parsley for garnish For a fresh garnish.

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the Cajun sausage and cook until it’s browned, about 5-7 minutes.
  • Toss in the diced onion, garlic, and bell pepper; sauté until soft, about 3-4 minutes.
  • Stir in the pasta, chicken broth, and Cajun seasoning, then bring to a boil.
  • Once boiling, reduce heat and let it simmer until the pasta is cooked al dente, roughly 10-12 minutes.
  • Mix in the heavy cream and shredded cheese, stirring until melted and creamy. Season with salt and pepper to taste.
  • Serve hot, garnished with chopped parsley.

Notes

For extra flavor, try using a mix of bell peppers or adding spices like smoked paprika. For more heat, add jalapeños or hot sauce. You can also customize with chicken or shrimp as protein, or add seasonal vegetables like spinach or zucchini.
