  • 2 pieces chicken breasts, cubed Use fresh chicken for best results.

  • 2 tablespoons olive oil For sautéing the chicken.
  • 1 small onion, diced A yellow or white onion works well.
  • 1 piece red bell pepper, diced Can substitute with other colors as preferred.
  • 3 cloves garlic, minced Fresh garlic adds great flavor.
  • 8 oz cream cheese, softened Low-fat options can be used but may change texture.
  • 1 cup heavy cream Can replace with milk for a lighter version.
  • 1 cup chicken broth Use homemade for better flavor.
  • 1 cup shredded cheddar cheese Feel free to mix different cheeses.
  • ½ cup grated Parmesan cheese Extra for garnish if desired.
  • 1 teaspoon paprika For added flavor and color.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cook the pasta according to package instructions, drain, and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the cubed chicken and sprinkle in the Cajun seasoning, cooking until brown and cooked through, about 5–7 minutes. Remove chicken and set aside.
  • In the same skillet, add diced onion, red bell pepper, and minced garlic. Sauté for about 3-4 minutes until softened.
  • Stir in the softened cream cheese until melted and combined with the vegetables.
  • Pour in the heavy cream and chicken broth, stirring to create a smooth sauce. Add shredded cheddar cheese, grated Parmesan cheese, paprika, salt, and pepper, continuing to stir until the sauce is creamy.
  • Return the cooked chicken to the skillet and introduce the drained pasta, mixing until well combined.
  • Transfer the mixture to a greased 9x13-inch baking dish.
  • Bake for 20-25 minutes until the top is golden and bubbly.
  • If desired, garnish with chopped parsley and serve hot.

Notes

To enjoy this dish, serve alongside a green salad or garlic bread. Elevate the flavor with extra Parmesan on top. For leftovers, store in an airtight container in the refrigerator for up to three days, or freeze for up to three months.
