Salad Ingredients

  • 1 head romaine lettuce, chopped
  • 2 cups uncooked farfalle pasta
  • 1 tsp salt for pasta water
  • 1/2 cup vegan Caesar salad dressing
  • 1/2 cup vegan Parmesan
  • 1.5 cups Chickpea Parm Croutons

Preparation

  • Bring a large pot of water to a boil. Add 1 teaspoon of salt once boiling.
  • Add 2 cups of farfalle pasta to the pot. Cook for the time indicated on the package, usually around 8-10 minutes.
  • While the pasta is cooking, wash and chop the romaine lettuce into bite-sized pieces.
  • Once the pasta is cooked, strain it and rinse it under cold water until it’s completely cooled down.
  • In a large bowl, combine the cooked pasta, chopped romaine, vegan Caesar dressing, vegan Parmesan, and chickpea croutons. Toss gently until everything is well coated.

Notes

To keep your Caesar Pasta Salad fresh, store it in an airtight container in the refrigerator for about 3-4 days. For optimal taste, enjoy it within the first 2 days. Consider adding the chickpea croutons just before serving to maintain crunch.
