Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel the butternut squash and cut it into 1-inch cubes.
  • In a large bowl, toss the cubed squash with olive oil, brown sugar, salt, pepper, and cinnamon until evenly coated.
  • Spread the squash cubes on a baking sheet in a single layer.
  • Roast in the preheated oven for 25-30 minutes or until the squash is tender and caramelized.
  • When finished, remove from the oven and serve warm.

Notes

This dish pairs well with roasted chicken, grilled pork, or a vegetarian grain bowl. Consider drizzling with balsamic glaze or adding toasted nuts before serving. Leftovers can be stored in an airtight container for up to 4 days or frozen for 2-3 months.
