  • 4 pieces boneless, skinless chicken breasts
  • 1 cup brown sugar, packed
  • 1 cup fresh pineapple chunks (or canned)
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped fresh cilantro (for garnish)

Preparation

  • Season the chicken breasts with salt and pepper to taste.
  • In a large skillet or frying pan, pour in the vegetable oil and heat over medium-high.
  • Place the chicken in the hot skillet, searing for about 4-5 minutes on each side until golden brown, then remove from the skillet and set aside.
  • In the same skillet, add the brown sugar, soy sauce, ketchup, minced garlic, and ground ginger. Stir until well combined and bubbly.
  • Add the pineapple chunks into the sauce and stir to mix.
  • Return the seared chicken to the skillet, ensuring it is well coated with the sauce.
  • Lower the heat to a gentle simmer, cover the skillet, and let cook for about 20-25 minutes until the chicken is fully cooked.
  • Verify the chicken’s internal temperature reaches 165°F (75°C).
  • Garnish with chopped fresh cilantro before serving.
  • Transfer the chicken to a serving platter and drizzle with the sauce from the skillet.

Notes

For deeper flavor, marinate the chicken in the sauce for at least 30 minutes before cooking. When simmering, keep heat low to avoid burning the sauce. A squeeze of lime can brighten flavors beautifully.
