  • 1 can can of chili
  • 4 pieces eggs
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper
  • Chopped green onions for garnish

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Pour the can of chili into the skillet and heat until warm.
  • Create four wells in the chili using a spoon or spatula. Crack an egg into each well.
  • Cover the skillet and cook until the eggs are set to your liking.
  • Sprinkle shredded cheese on top of the chili and eggs.
  • Cook for an additional 2 minutes until the cheese has melted.
  • Season with salt and pepper, and garnish with chopped green onions before serving.

Notes

For a complete meal, serve with crusty bread or toast for dipping. Store leftovers in an airtight container for up to 3 days.
