Cake Ingredients

  • 1 cup all-purpose flour Sifted for a lighter texture.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened Should be at room temperature.
  • 1 cup granulated sugar
  • 2 large eggs Fresh for better flavor.
  • 1 teaspoon vanilla extract
  • 1/2 cup milk Whole milk is recommended.

Filling and Topping

  • 1 cup heavy cream Chill the bowl for whipping.
  • 1 cup vanilla pudding (prepared) Can use store-bought or homemade.
  • 1/2 cup chocolate ganache (or chocolate icing) Make from equal parts cream and chocolate.

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing until well combined.

Baking

  • Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  • Allow the cake to cool completely.

Assembly

  • Once cooled, carefully slice the cake in half horizontally.
  • Spread the prepared vanilla pudding on the bottom layer, then place the top layer back on.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Spread it evenly over the top layer of the cake.
  • Drizzle chocolate ganache over the whipped cream layer.
  • Chill the cake in the refrigerator before serving.

Notes

Serve chilled and consider adding fresh berries or a dusting of powdered sugar. Best enjoyed with coffee or tea.
