  • 6 large large eggs
  • 2 cups milk Use plant-based milk for a vegan option.
  • 1/2 cup maple syrup Can be kept for sweetness even in vegan options.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups blueberries Can swap for other fruits like raspberries or strawberries.
  • as needed Butter For greasing the baking dish.

Instructions
 

Preparation

  • Grease a 9×13 inch baking dish with butter.
  • Tear the loaf of bread into pieces and spread them evenly in the baking dish.
  • In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, and cinnamon until smooth.
  • Pour the egg mixture over the bread, pressing down gently to absorb.
  • Scatter the blueberries evenly on top.
  • Cover with plastic wrap and refrigerate for at least 2 hours, or overnight.

Baking

  • Preheat your oven to 350°F (175°C).
  • Bake uncovered for 40-50 minutes, until golden brown and set.
  • Allow to cool slightly before serving.

Notes

Serve warm with extra maple syrup or powdered sugar. Pairs well with whipped cream or crispy bacon. Store leftovers in an airtight container for up to 3 days.
