Ingredients

Chicken and Marinade

  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced Can substitute with garlic powder if fresh is unavailable.
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 whole lemon, juiced
  • Salt to taste
  • Pepper to taste

Garnish and Serving

  • 2 tablespoons butter
  • 1 cup grated parmesan cheese

Instructions

Marination

  • In a mixing bowl, combine olive oil, minced garlic, Italian seasoning, salt, pepper, and lemon juice. Add the chicken breasts, ensuring they are evenly coated in the marinade. Allow them to marinate for at least 30 minutes for maximum flavor.

Cooking

  • Preheat your Blackstone griddle to medium-high heat, approximately 375°F.
  • Once the griddle is hot, place the marinated chicken on it. Cook each side for about 5-7 minutes until golden brown and cooked through (internal temperature should reach 165°F).
  • In a small saucepan, melt butter over medium-low heat. Stir in additional minced garlic and sauté until fragrant, about 1 minute.
  • Pour the garlic butter mixture over the cooked chicken and top with grated parmesan cheese.
  • Serve hot with your favorite sides.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, drizzle with olive oil and place in a skillet over low heat. Can also be frozen for up to three months.
