Wrap Ingredients

  • 1 can black beans, drained and rinsed Canned black beans work perfectly for this recipe.
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend) Can be substituted with dairy-free cheese for a vegan option.
  • 1 large flour tortilla Whole wheat tortilla can be used for a healthier option.
  • 1/2 cup corn (fresh or canned)
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup Greek yogurt or sour cream Can be replaced with vegan alternatives.
  • 1 avocado, sliced
  • 1 cup lettuce leaves
  • Salt and pepper to taste Seasoning is important for enhanced flavor.

Instructions
 

Preparation

  • In a bowl, mix together black beans, cooked rice, corn, diced tomatoes, red onion, and season with salt and pepper.
  • Lay the tortilla flat and spread some Greek yogurt or sour cream in the center.
  • Layer the black bean mixture, cheese, lettuce, and avocado on top of the yogurt.
  • Fold the tortilla sides over the filling, then fold up the bottom and roll into a wrap.

Cooking

  • Heat a skillet over medium heat and place the wrap seam-side down.
  • Cook for 2-3 minutes until golden brown, then flip and cook the other side.
  • Remove from the skillet, cut in half, and serve.

Notes

Serve warm, optionally with extra Greek yogurt or sour cream on the side for dipping. Great with fresh salsa or guacamole.
